2 kg tomatoes, cut into halves
1/2 cup olive oil
6 cloves garlic, finely chopped
1 large onion, finely chopped
1 shallot (white part only), finely chopped
1 tablespoon of Italian spices
1 tablespoon sugar
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon fresh thyme, finely chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh rosemary, finely chopped
3 cups vegetable stock
1/2 cup olive oil
6 cloves garlic, finely chopped
1 large onion, finely chopped
1 shallot (white part only), finely chopped
1 tablespoon of Italian spices
1 tablespoon sugar
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon fresh thyme, finely chopped
1 teaspoon fresh oregano, finely chopped
1 teaspoon fresh rosemary, finely chopped
3 cups vegetable stock
Method
1- Preheat the oven to 150 ° C. Cover a baking sheet with parchment paper.
2- In a bowl, place tomatoes, garlic, onions, leeks, olive oil, Italian spices, sugar, salt and black pepper. Stir the ingredients until they overlap.
3- Place the marinated tomatoes on the baking tray, with the peel facing downward. Add the remaining seasoning amount in the bowl over the tomatoes.
4- Add thyme, oregano, and rosemary. Put the tray in the oven for an hour. After that, raise the oven temperature to 190 ° C and cook for 30 minutes.
5- Take the tray out of the oven and put the tomato mixture in a saucepan over medium heat. Add vegetable broth and leave the saucepan on the stove until it boils.
6- Turn off the fire. Grind the mixture with an electric mixer until you get a smooth texture.
