Spaghetti with grilled vegetables
Ingredients
"Spaghetti Pasta
2 eggplants
2 zucchinis
1 medium red pepper
1 medium yellow pepper
1 medium green pepper,
1/4 cup olive oil
4 cloves garlic, crushed
2 sticks of chopped green onions with leaves
3 tbsp tomato paste
1 cup cherry tomatoes, halved
1 tablespoon of mixed spices
1 tablespoon of salt
1/2 teaspoon black pepper
1 cup pitted black olives

Method
Prepare the pasta using the pasta maker
1. Cut the eggplant, zucchini, into thin circle slices, wipe with oil.
2. Heat the grill, place the vegetable pieces on the grill. Flip on both sides until grilled.
3. Using a knife, cut the grilled vegetables into small pieces. Leave it aside.
4. Cook the pasta
5. In a large pan, heat the rest of the oil, add garlic, spices, salt and pepper, then add onions and cook.
6. Add the tomato paste and about a cup of boiled water for pasta, add the vegetables and tomatoes and mix well.
7. Take the pasta out of boiling water, then put it directly on the vegetable mixture. Stir to mix, add half the amount of cheese.
8. Place the pasta in a serving dish, add more cheese, stir and then serve hot.
